Thanksgiving is this Thursday and it’s a time to gather with family and your closest friends to give thanks for the many blessings you have. It’s also a time to enjoy others’ company and indulge in delicious food you may only get to enjoy this time of year ?? One thing I know I’m thankful for this year is my pup, Palmer. She’s my soon-to-be 7-year-old Bernese Mountain Dog who is the best big sister to her two tiny human sisters.
I thought it would be so fun to recreate a favorite Thanksgiving dessert into a treat my dog will love; Salted Caramel Cheesecake Pumpkin Bars. These are so fun and easy to make for the holiday.
You will need:
1 Box of Salted Caramel Cheesecake Mix
1/3 cup of hot tap water for the coconut crumble crust
1 cup of hot tap water for the cheesecake mix
1 Box of Pumpkin Cake Mix
1 egg
¾ cup of water
¼ cup of oil
To begin, place the coconut crust mix in a bowl and add 1/3 cup of hot tap water and stir until water is absorbed. Press crust evenly into a springfoam pan and place into the freezer while you make the cheesecake.
In a medium mixing bowl, stir the cheesecake mix and 1 cup of hot tap water until all lumps are removed. Remove the crust from the freezer and pour the cheesecake mix evenly over the crust. Cover the pan with plastic wrap and place in the refrigerator for at least 2 hours. Then move onto making the pumpkin cake.
Preheat your oven to 350 degrees. Follow the directions on the back of the pumpkin cake mix box by adding 1 egg, ¾ cup of water and ¼ cup of oil to the cake mix and stir well. Pour batter into a pan coated with non-stick cooking spray and bake for about 15-20 minutes.
Once cake has cooled, use any desired cookie-cutter to cut out the cheesecake and cake. I used a biscuit cutter. Finally, garnish with some cinnamon and add a dollop of icing.
